Most of us will wait until Nov. 22 to gorge out on a big meal of turkey, and then feel quite tired and bloated from the experience.&lt;br /&gt;And all of us scientific-minded people like to sound very sciency at those moments and talk about the effects that tryptophan in the turkey are having on our bodies. I’ve bought into that thinking for decades and thought I’d Google around the net to learn more about that, and was surprised to see that I’ve probably been duped.&lt;br /&gt;Turkey does in fact contain high levels of tryptophan, but not anything significantly higher than lots of other meats. Tryptophan is an amino acid that our bodies can’t produce. And taken on an empty stomach, it can have a soothing, calming effect. It was even marketing as an anti-insomnia drug in the 1980s until some other significant side effects – muscle pain and death – led the government to ban it as a medication.&lt;br /&gt;After a big feast, out stomachs are dealing with the amino acids from many different food sources, meaning that the tryptophan has a lot of competition in our body chemistry.&lt;br /&gt;Here’s what’s more likely going on in our bodies to make us tired: the impacts of having lots of other carbohydrates in our stomachs. Carbo-heavy items like mashed potatoes, stuffing and pie take our bodies a lot of effort to digest. That internal work is a lot to handle and our bodies tire out.&lt;br /&gt;So that’s the nutritional answer to why Thanksgiving dinners make us tired. I think you might also be able to chalk up your tiredness to the quality of conversation with the relatives you’re sharing the meal with or the fact that the Detroit Lions are always playing football that afternoon.&lt;br /&gt;How do you deal with post-Thanksgiving dinner lethargy? America has made Halloween a fun, and commercial, holiday, unlike some other countries. There is an old Celtic (KELT-ik) belief that souls of those who have passed away revisit the earth on October 31, and many countries have more serious traditions to honor the dead. Some, like America, use the night to have some fun. Unfortunately, some folks use the night as a time to play tricks on others, and that could happen in any country. &lt;/strong&gt;&lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;span style="font-size:130%;color:#993399;"&gt;&lt;strong&gt;2 In some countries, "Halloween" may not even occur on October 31. Celebrations with other names may occur November 1 or at other times of the fall or even summer. Here's a sampling of what other people do to celebrate "Halloween" or festivals that honor the dead. &lt;/strong&gt;&lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;span style="font-size:130%;color:#993399;"&gt;&lt;strong&gt;3 Mexico: El Dia de los Muertos (Day of the Dead) - The holiday begins the night of October 31, continuing on November 1 with All Saints Day and November 2 with All Soul's Day. These may be considered by many Mexicans as the most important celebrations of the year. Mexicans use these days as an opportunity to decorate the graves of family and friends who have passed away. November 1 focuses on children who have died, and November 2, on adults. People often set up altars with food to welcome the souls for a visit. &lt;/strong&gt;&lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;span style="font-size:130%;color:#993399;"&gt;&lt;strong&gt;4 Italy: On November 1 in Sicily, children anticipate that they will awaken on November 2 to sweets and toys left by their dead relatives. He held up a sign which said: "I am blind, please help." There were only a few coins in the hat.&lt;br /&gt;&lt;br /&gt;A man was walking by. He took a few coins from his pocket and dropped them into the hat. He then took the sign, turned it around, and wrote some words. He put the sign back so that everyone who walked by would see the new words.&lt;br /&gt;&lt;br /&gt;Soon the hat began to fill up. A lot more people were giving money to the blind boy. That afternoon the man who had changed the sign came to see how things were. The boy recognized his footsteps and asked, "Were you the one who changed my sign this morning? What did you write?"&lt;br /&gt;&lt;br /&gt;The man said, "I only wrote the truth. I said what you said but in a different way." I wrote: "Today is a beautiful day but I cannot see it."&lt;br /&gt;Both signs told people that the boy was blind. But the first sign simply said the boy was blind. The second sign told people that they were so lucky that they were not blind. Should we be surprised that the second sign was more effective?&lt;br /&gt;&lt;br /&gt;Moral of the Story: Be thankful for what you have. Be creative. Be innovative. Think differently and positively.&lt;br /&gt;&lt;br /&gt;When life gives you a 100 reasons to cry, show life that you have 1000 reasons to smile .&lt;br /&gt;&lt;br /&gt;Face your past without regret. Handle your present with confidence. Prepare for the future without fear. and for the non-meat eaters... I have substituted for the beef using meat substitutes..... it is delicious!!!!&lt;br /&gt;&lt;/span&gt;&lt;/strong&gt;1 pound very lean (diet) ground sirloin --- or meat substitutes!!&lt;br /&gt;2 large onions, chopped&lt;br /&gt;2 - 4 cloves (not whole garlics as I did the first time) minced&lt;br /&gt;2 8 oz. cans of no-salt-added tomato sauce (I use diced tomatos umm)&lt;br /&gt;1 &amp;amp; 1/2 cups of water (less if you used diced tomatos)&lt;br /&gt;3 tablespoons of chili powder&lt;br /&gt;1/8 teaspoon cayenne pepper, or to taste&lt;br /&gt;1 teaspoon ground cumin&lt;br /&gt;1 tablespoon fresh oregano OR 1 teaspoon dried oregano&lt;br /&gt;Freshly ground black pepper to taste&lt;br /&gt;1/2 teaspoon salt (optional) I pass on this one pass.... pass&lt;br /&gt;2 15 oz cans pinto beans... rinsed and drained&lt;br /&gt;2 tablespoons cornstarch (optional) sometimes I do... sometimes I don't&lt;br /&gt;1/4 cup cold water&lt;/span&gt;&lt;br /&gt;&lt;span style="color:#993399;"&gt;&lt;strong&gt;eat with chips.... low salt or none and oven baked if possible.. use good judment here... no sense cooking this and eating it with unhealthy chips.. okay..... ready now??? Lets go......&lt;br /&gt;&lt;/strong&gt;&lt;/span&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;Heat a heavy, nonstick skillet over medium-high heat. Add ground beef and saute, stirring occasionally, 4-5 minutes or until meat is no longer pink. Note... I have cooked this chili using meat substitutes.... it is wonderful!!!!!!!! Pour contents of pan into a strainer or colander lined with paper towels. allow fat to drain out... if you used the diet lean meat... there will be no drainage...... yeah!!!&lt;br /&gt;&lt;strong&gt;&lt;span style="font-family:verdana;font-size:130%;"&gt;In a large, heavy saucepan or Dutch oven, heat oil over medium-high heat. Add onions and saute 2-3 minutes, or until translucent. Add meat, garlic, tomatos sauce or diced tomatos and 1 1/2 cups of water (or 1 cup if using diced tomatos). Simmer 20 minutes or so. Stir in chili powder, cayenne pepper, cumin, oregano, pepper, salt, pinto beans and black olives (optional). Allow to simmer an additional 30 - 40 minutes (per the book) but......... I go for 2 1/2 to 3 hours until the neighbors come knocking looking to eat...... I mean... if you are going to do it.... do it right... but keep checking the water level. Humm,, see, I am cooking this as I am typing... and it is now 1 &amp;amp; 1/2 hours since I started it and it is smelling soooo good about now. Anyway... it says to take cornstarch and mix it in with the 1/2 cup of cold water and stir it into the chili mixture to thicken and to cook an additional 3 - 4 minutes. I usually do not have to.... plenty thick after 2 - 3 hours cooking. Okay,,, it is done... serve with chips however..... I highly recommend that you stick this in the fridge and serve it the next day.... it is even better. However, after cooking it the time I do the smell is into your closet two floors up so when everyone gets home... they want to eat it now!!!!!!!!&lt;/span&gt;&lt;/strong&gt; &lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;&lt;span style="font-size:180%;color:#cc6600;"&gt;&lt;strong&gt;MIKE's Secret Liver &amp;amp; Onions&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;Get out two large frying pans... put olive oil in both...you cut up potatos and put in half the pan.. the other half of that pan you put in two large cut up onions and 2 - 4 cloves of garlic.... now you get out your thawed calves liver.. and you cover in flour and put in pan on medium.... after 6 - 7 minutes around Medium High and then turn the liver and put on more flour.. now.. here comes the good part..... you take the onions and garlic from pan no. 1 and cover your liver... and you pour 1/2 cup of red wine over all and put on the lid.. allow to simmer for 5 - 7 minutes... when that is done dish up, sit back and enjoy.... Drain off fat. In a large bowl combine onion, tomato sauce, rice and cabbage. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over mixture. Cover with aluminum foil, and bake in oven for 1 hour. Stir. I just do it with what I have usually tomato sauce, or that Italian stewed tomato sauce, I like one small can of tomato paste it helps take the edge off the acid for me and sweetens it a mite. I always start with fresh clove of garlic, then chopped onions. I put allot of Italian herbs in too!&lt;br /&gt;I add some Black strap Molasses too! hehe did that to make sure youngest got her IRON and cook it in a Cast Iron Skillet..&lt;br /&gt;I guess I inherited some above from my MO born Mom! lol.. No Italians in this family! ha! But don't ask for a recipe OK! lol.. Add a small amount of olive oil if your sausage is lean. Cook until done through. Set aside.&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;span style="color:#cc0000;"&gt;&lt;strong&gt;For the Spaghetti Sauce&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;/span&gt;Ingredients:&lt;br /&gt;2 large onions, chopped&lt;br /&gt;1 cluster (not clove) garlic, chopped&lt;br /&gt;1 green (or red) bell pepper, chopped&lt;br /&gt;1 lb. button mushrooms, sliced or chopped (optional)&lt;br /&gt;olive oil (for sauteing)&lt;br /&gt;2- 28 oz. cans Hunts Choice-Cut Diced Tomatoes&lt;br /&gt;2- 28 oz. cans Hunts Tomato Sauce&lt;br /&gt;2- 10 oz cans Ro-Tel Mexican Festival Diced Tomatoes (with lime juice and cilantro)&lt;br /&gt;1/4 cup oregano leaves (or 1/2 cup fresh chopped oregano)&lt;br /&gt;2 Tbls. Basil leaves&lt;br /&gt;2 Tbls. Rosemary&lt;br /&gt;1 Tbls. Thyme&lt;br /&gt;2 Tbls. cumin&lt;br /&gt;Dash of sugar (to bring out flavor)&lt;br /&gt;Dash of salt (to bring out flavor)&lt;br /&gt;&lt;span style="font-size:130%;color:#990000;"&gt;&lt;strong&gt;Preparation:&lt;br /&gt;&lt;/strong&gt;&lt;/span&gt;In large Dutch oven or stock pot, put in enough olive oil to cover the bottom for sauteing. Heat oil to medium-high. Add garlic and saute approx. one minute until oil is "garlic-flavored". Add onions, green (or red) bell pepers, and mushrooms (if used). Saute until tender-crisp.&lt;br /&gt;Add remaining ingredients. At medium-high heat bring just to boiling stirring frequently.
